Quick and Easy Recipe: Chicken Tortilla Soup – Deep Covered Baker

During this busy holiday season, I am constantly looking for a quick and easy recipe. Recipes can sometimes be very complicated, but we found a quick and easy recipe you are going to love. I usually let my daughter do most of the baking in our house, but I prefer to cook the main meals. Over the past week, we were so busy cooking for different Christmas parties that we were looking for something really quick and easy to make on Saturday afternoon.

She decided to use our Pampered Chef Deep Covered Baker to make Chicken Tortilla Soup. Here is the recipe.

Chicken Tortilla Soup – Deep Covered Baker
She combined two popular Deep Covered Baker recipes to make this awesome soup. It was better than the original stovetop version.
Here is what you will need:

2-3 chicken breasts (fresh or frozen) We used frozen chicken
1 small yellow or red onion, chopped
1 green pepper, chopped (red, yellow or orange, whichever you like)
1 package chicken taco or fajita seasoning mix
1 can (15 ounces) whole kernel corn, undrained
1 can (15 ounces) beans in chili sauce, undrained
1 can diced tomatoes, undrained
2-3 cans or 1/2 box chicken broth
In the Deep Covered Baker, place the onion and pepper in the bottom. Sprinkle with half the seasoning. Layer the chicken on top and sprinkle the rest of the seasoning. Cover and microwave for 12-15 minutes.
Remove and shred the chicken. Add the remaining ingredients, stir thoroughly, and heat 10-12 minutes until hot. Serve with tortilla chips, sour cream, and grated cheddar cheese. We loved this recipe. I told her she had to make it again real soon. As you can see from the recipe it only took about 25 minutes from start to finish. Now that is what I call a quick and easy recipe. Try it and I bet you will agree.
