Entertaining at Work: 5 Ways to Make it Easy

Entertaining at work can be challenging sometimes. This week we will be celebrating several occasions from the last 3 months. We have work anniversaries, birthdays, and promotions, which we are celebrating with oneENTERTAINING big event. I don’t know about you, but sometimes I want something besides cake and something to drink for a celebration. For this event, I decided to do a Baked Potato Bar (white and sweet). It’s very easy to do if you know a few tricks.

We do not have a full kitchen here at the Library, which makes entertaining quite difficult. We have a sink, a microwave, a medium-sized refrigerator, and a toaster oven. Therefore, we would need to cook the main course (potatoes) at home; but who wants cold potatoes? Here are a few suggestions to alleviate that problem:

  1. White potatoes: Scrub, prick with a fork, rub with oil, season with salt, and wrap in foil. Place the potatoes into a slow cooker, cover, and cook on high for 4 1/2 to 5 hours or on low for 7 1/2 to 8 hours until tender.
  2. Sweet potatoes: Wash, prick with a fork and wrap in foil. You can skip the foil if you wish, but it helps to keep the slow cooker clean. Cover and cook on low for 6-7 hours until tender.
  3. Place both, baked sweet and white in a cooler. That’s right, a regular cooler.  Put the sweet potatoes in a paper grocery bag to separate them from the white potatoes (I learned this lesson the hard way). You will not be able to tell the sweet from the white because they are both wrapped in foil. The potatoes will stay warm until you are ready for your party.
  4. Have your co-workers bring the toppings which will include bacon bits, guacamole, shredded cheese, chili, onions, sour cream, butter, salsa, jalapenos, chopped broccoli, cinnamon and brown sugar (for the sweet potatoes), and any other toppings you can think of. Some of your co-workers might want some type of meat. They can bring grilled and shredded chicken, pork, or even shrimp.
  5. Have a couple others bring drinks and dessert and you are all set for a great get together. Plan on having Fritos for those who want to make Frito Chili Pie.
