Meatball Tortellini Soup: Simply Delicious

Meatball tortellini soup is one of my favorites. This is the soup I request when my daughter asks me what soup I want. If you have not tried Meatball Tortellini soup you are missing a treat.

Here is the recipe:

MEATBALL TORTELLINI SOUP

INGREDIENTS:

  • 1 can (14-1/2 ounces) beef broth
  • 12 frozen cooked Italian meatballs (or make your own, see below)
  • 3/4 cup fresh baby spinach
  • 3/4 cup stewed tomatoes
  • 1 can corn, drained
  • 3/4 cup frozen cheese tortellini (about 20)
  • Salt and pepper (to taste)

IF YOU ARE MAKING YOUR OWN MEATBALLS:

  • 8 ounces ground beef (or turkey)
  • 1⁄4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 large egg, lightly beaten
  • 1 garlic clove, grated

Combine the beef, parmesan, parsley, the egg, garlic, salt and pepper to taste in a medium bowl; mix with your hands until just combined. Form into 1-inch meatballs; set aside.
Heat oil in a pot or Dutch oven over medium-high heat. Add the meatballs and cook, turning until golden, 3 to 4 minutes. Check out this gorgeous Dutch Oven (comes in lots of amazing colors)!

DIRECTIONS:

Bring broth to a boil in a large saucepan. Add meatballs. Reduce heat; cover and simmer for 5 minutes.
Add the spinach, tomatoes, and corn; cover and simmer for 5 minutes. Add the tortellini, salt and pepper; cover and simmer for 3 minutes or until tortellini is tender. Yield: 4 servings.

Meatball Tortellini Soup is quick and delicious. From start to finish you are ready to eat (even if you are making your own meatballs) in about 30 minutes. Other variations include using ground turkey, chicken, or sausage. You can also sprinkle chopped parsley on top for a little garnish.  All the colors in this soup blend nicely.  Some say hearing a good sermon is like eating a good meal and coming back for seconds. I can guarantee you will enjoy this soup and come back for seconds, maybe thirds.  So enjoy.
